Back in the day it was Teflon, the greatest think ever! Then that was bad for you. Then others came along and then were bad for you. Non stick to me has always been convenient (most of the time, some pans suck), but I think ceramic is much better. And I love the blue diamond pans!

I think they are perfectly safe until the coating gets damaged, then it’s time for the pan to go. Which the coating doesn’t seem to be that durable anymore, so yeah ceramic is the way to go.
