My notes: While I don't have the confidence to can (we screwed up some batches), I know of several who do. Do you can? If so, what do you do?

I don't can myself, but my hubby has a ball. He loves canning, especially beets. He just loves them! Personally, I think beets are yucky, but each to his own

I have never canned food, I also do not like eating canned food because of its high sodium content. However, I have made pickles, which I guess is also some sort of canning process.

The word "can" is a misnomer when it's actually in JARS lol We've made pickles, kimchi. It's considered in the category of "canning". We too don't like to eat canned store-bought foods too often due to high sodium content. Best thing about doing your own is you can control the spices.
