Some of this information I already knew, but, some of it, I didn't know... still learning:-)
Been eating sourdough bread for about 12 years.
We don't eat it every day, and, when we do, it's mostly as toast, sometimes sandwiches.
Haven't found an organic one yet, but have found a couple that are non-GMO.
