I also live out in a rural town. We do have enough acreage to have a decent garden plot, but we also have rather mature pines that make it difficult to use the land to the full extent that we could. If we were to remove the pines, we would be doing plenty of landscaping to make it usable for something different, considering how much the root system covers and how much we would have to fill in to get it to be level.

An option could be to use raised beds & fill with topsoil. We have sandy soil & it's a challenge to grow flowers & veggies here. We've made cedar boxes & filled with topsoil a good foot. One of these days, we'll make them larger & fill in more areas.

I think the most interesting part of the garden made food is that you know what you are eating and you have check on the quality. I think future is definitely the indoor food or the urban garden food. It would work out if the person has interest in garden especially.
