What do you do if your plants die off early in the season? From unusual cold or hot weather before they can establish themselves or destroyed by animals?

Yes, as Bob says, get more just in case. Make sure you wait til after the last frost to plant them and cover your plants, especially from the cold nights. Destroyed by animals...that's harder...you can always protect them a little with some kind of fencing, though.
And, watering is key...especially in hot weather...it helps to wait til after the sun goes down, too

I lost a good amount due to the recent heat, even with watering a lot they just weren't established yet. Thankfully, stores still had plants and on discount sale no less, but if anything else goes I'll just have to plant seed.

demonskeith, Bob, lainee, I didn't lose mine but they got stunted with this drought even though I too watered a lot. But we were only hot for a couple of days so it wasn't much time to do damage. I would do what the others have said. Get some more. Especially ones established & bigger so they can withstand it better than seedlings.
