Kolaczki cookies are a cream cheese cookie that's has two corners folded in the center and there is a fruit filling.
The first time I made these cookies, I didn't add enough flour, so they were just goo. How awful. So make sure you have enough flour to actual use the dough without it sticking to your hands. But don't add too much flour that it cracks when you roll it.
Another problem I had the first few times making these, was that they would open up. I learned to stick a toothpick in the center to keep the folded ends in place and make sure the toothpick hits the cookie sheet. Works about 99 percent of the time.
I also bake these on top of parchment. Today I used my parchment twice, which I haven't done in the past, but it saves me money and clean up.
When I take the cookies off the cookie sheet to cool on the racks, I make sure that they cool a little bit before throwing them into the powdered sugar.
They freeze, but they're not as good as they are on day 1.

Never made these. Yeah, I’ve used flour to help the dough not stick to my hands when making pastries and cookies.
